This Clarified Butter (ghee) is made with Grade AA butter made from the milk of cows not treated with rBST - every eight ounce jar starts out as 10 ounces of butter. Because the solids have been removed, Clarified Butter has a much higher smoke point than regular butter (485ºF vs. 350ºF+-), and it doesn't separate when heated, making it ideal for pan frying everything from vegetables to shrimp. You can use it in baked goods in place of ordinary butter to extend the shelf life of your cakes and pastries. It's very common in Indian cuisine, where it is primarily used as a cooking oil, as a dipping sauce for warm bread, and as a lamp oil in religious ceremonies.
